Things to watch for...
1) Increase of oil level.
2) Water droplets even after warm up (could be cause by condensation, is ok as long they disappear after warm up). That could be cause by parking the vehicle for long periods of time on a humid place.
3) Coffee Tan Murky color, signs of coolant in oil or water.
4) Strong Gasoline odor.
5) Very thick-black, almost Tar like consistency (signs of none existent or hardly no maintenance and also from really heavy driving without very little oil changes).
6) Silver or Gold Glitter Dust like particles, can be Brass, Copper, Aluminum, Iron or Steel. The engine has destroyed a bearing and producing metal to metal contact. Definitely is not a good sign at all !
Read your Owner's Manual for oil change intervals and you will be fine. Usually today's cars run about 5000 to 7,500 miles change. 3000 is a waste of money due to over service (urban legend).

When you don't change it your stopping the engine from running longer and better. Oil is the second most important fluid in your car, gas would be the first but it wont destroy your engine if your low on it.
